About the Workshop

For millennia, the peoples of the Italian peninsula have produced salumi and cheeses famous throughout the world. Today an incredible array of these products is to be found  in Italy. Showcasing and paring the extraordinary flavors of this bounty is one of the unique challenges presented by this incredible array of ingredients in seeking to prepare  beautiful and delicious charcuterie boards with a cohesive flavor profile.

Our objective in this workshop is to expose participants to wide range flavors and textures of the cursed meats and cheeses of our region of Umbria - arguably, one of the most famous in the country for these products. Being introduced to these flavors begs for insights into how they can work together with fruits and vegetables, bread and wine, a unified, whole experience of deliciousness!

We are most fortunate as our guide in in this adventure is none other than famed connoisseur, restaurateur, sommelier, distinguished professor, and advisor to producers - Antonio Andreani!  A professor at the famed, University di Sapori in Perugia, Antonio's expertise and skill as a taster is matched only by his delightful personality, warm sense of humor and his genuine passion for the experience of food and wine. Join us for a workshop and that will change the way you experience food and wine and perhaps change your life!

Our journey appropriately begins with how to taste and how to use taste and texture to enhance flavors and create new experiences. Four mornings will devoted to tasting and lecture: getting familiar with the flavor palette of traditional meats and cheeses, as well as wines, then getting to know traditional combinations while experimenting with innovations.  Afternoon will be spent with producers of these products: farms and vineyards, cheesemakers and the famed Norcini (butchers and salumi-makers) of Umbria. We will observe the work of these masters and sample their products.  On Friday, we will visit the town of Norcia itself, from which all butchers carry the name of Norcini (all belonging to Norcia)! In Norcia we will visit several shops and producers and then move on to the town of Spello famous for its olive oil.

Of course we won't forget about the importance of wine in this array and we will make daily vists to nearby vineyards and olive orchards as part of our itinerary.Our approach will be both fun and informative. Paired with delicious foods from our kitchen and the spectacular views fromour dining terrace - the course will provide everyone the opportunity to fully experience the richness and beauty of the Umbrian landscape as well as the excellence of its culinary and viticultural traditions.

 

The program is all inclusive with accommodation provided in our beautifully preserved 14 th c., medieval hill town. We provide Welcome and Departure services at the Rome/Fiumicino, Leonardo da Vinci International (FCO) airport as well as airport transfer by private bus. Using locally sourced and artisanal ingredients, three traditional meals are lovingly prepared by our kitchen staff and chef Federico Monday through Thursday. On Fridays our private bus will transport participants on two excursions: the first to the fabulous city of Florence and the second to Orvieto, which boasts one of the most beautiful cathedrals in Italy. Saturdays and Sundays, we provide an incredible brunch with fresh baked bread and pastries, a variety of eggs, cheeses, and cured meats, as well as fresh yogurt and fruit. Of course, all accompanied by terrific, chilled Prosecco! Saturday and Sunday dinner are also grill-day’s and we will enjoy savory grilled meats (including wild game), fresh vegetables, and more! All lunches and dinners are accompanied by local wine, wines from our extensive Wine List available for purchase. Our bi-lingual staff is on hand 24/7 to fill your needs.

  • Airport transfer from and to the Leonardo da Vinci Rome/Fiumicino Airport (FCO) aboard our private bus (on scheduled dates only). Bus departs the airport promptly at 12PM.

  • Unless otherwise specified, single occupancy accommodation is provided in rooms with a view of the Tiber Valley that includes sink and vanity. Rooms are with shared bath on each level (3 rooms per bath) in our 14th century convent building, The Asilo. Apartments, rooms with private bath and AC, double rooms, group or villa accommodations are available for couples, business associates/ friends, or groups for an additional fee
  • Linens and towels provided
  • Weekly housekeeping service with change of towels and linens

Payment Options

Refund/Cancellation Policy

Payment in full must be made within 30 days of submission of € 500 (Euro) non-refundable deposit in order to hold the reservation.

Payment in full is required within 60 days of the start of the workshop- no participant will be admitted to our airport transfer with an outstanding balance.

All payments are non-refundable after payment in full has been made - however, under certain circumstances (see below) credit from one course may be utilized for another within a one-year period.

Session Cancellation by ICARTS

ICARTS only “cancels” retreats in the event of low enrollment or in circumstances in which providing the opportunity to re-schedule is not possible.

In circumstances in which travel is interrupted due to travel restrictions or health protocols, Force Majeure (such as a: strike, riot, acts of God) ICARTS WILL NOT CANCEL and will re-schedule programs to the soonest reasonable opportunity.

In case of death or illness. of instructor, a substitution will be made at the discretion of ICARTS

Each ICA Retreat requires a minimum number of participants in attendance - including the Residency Program. While the minimum enrollment number may vary according to the timing and duration of the session, the limit is typically, six (6), to nine (9)

If the minimum number of participants is not reached, we reserve the the right to cancel those programs.

If deemed necessary, notification of cancellation will be made as soon as possible following the close of Registration or typically, 30 days before the start of the session/course/tour/event.

When a condition arises that results in a cancellation, participants will be notified and the class will be rescheduled to a later date.

In event that ICA determines that enrollment for a particular session/Retreat is insufficient, ICA will typically offer you:

(a) an option to join an alternative session/course/tour/event, within a one-year period or

(b) to defer your participation until the rescheduled date of the intended workshop

Cancellation by the Participant

Cancellation by the participant is not possible however, in certain circumstances - such as illness of the participant or illness or death of a close relative or spouse - payment may be applied to another workshop within a one-year period.

Candidates seeking to cancel due to personal hardship, illness, or death should contact the ICA in writing, stating full personal and course details. In this case, fees paid  – excluding deposit - MAY BE applied to another workshop within a one-year period. However, this withdrawal and substitution may not cause the enrollment to fall below the minimum number, and this is the case substitutions cannot be made.

Up to 90 days before a session/course/tour/event starts a participant may also request a transfer to another session/tour/course/event, provided the original session/tour/course/event still has the minimum number of participants.

NOTE:

In cases of Force Majeure (such as a: strike, riot, acts of God, unforeseen illness or death, or death of a family member) we highly recommend that your travel insurance policy include coverage for any trip cancellation that may occur prior to or afterdeparture. Policy coverage varies. Often, it is advantageous to purchase your coverage prior to reservation payments with us and your flight provider. Check your specific policy carefully for more information. See the travel insurance section of the ParticipantHandbook for more information.

  • Excursion:  Norcia
  • 8am departure  Visit to the towns of Norcia and Spello, known for their traditional specialties, sausages, salami, Norcia ham, "lonza", "finocchiona", "coglioni di mule" - tour of the historic shops with tasting (included).Time dedicated to shopping.Return to MCV at 7.30pm

Day 7: Saturday, May 4

  • Guided tour of the Teatro della Concordia (the smallest theater in the world with just 99 seats, a wooden structure in Goldoni style and perfect acoustics).
  • Visit to the Torre del Maggio (an ancient, perfectly preserved medieval watchtower containing a small collection of medieval weapons), a breathtaking view from which to admire the entire Tiber valley.
  • 11.30am brunch
  • 3pm visit to the ancient butchery "David Salumi" in San Venanzo, at the foot of Mount Peglia with tasting of the famous "sella di San Venanzo", visit to the laboratories and shop. Time dedicated to shopping.
  • 7pm return to MCV
  • 8:00 Farewell Dinner
